FOOD Oysters

Joffrey Dubaul, a 29-year-old oyster farmer out of France, is making the world his oyster. In an attempt to stay relevant in the era of food fads, Dubaul hopes his flavored oysters will be the next sensation.

To achieve his unique oyster taste, he soaks them in flavored sea water. Depending on the essence he's looking for, the process takes anywhere from 2 to 12 hours.

Available in lemon, raspberry, and ginger, the flavored oysters are becoming quite a success.

“I thought that if there’s no need to get the lemon separately, it’ll tempt a younger crowd to have oysters with pre-dinner drinks,” Dubault told Bloomberg. “It turns out that restaurants in China, Dubai, Spain, Belgium and Italy fell for the idea.”

As the oyster season is at its European peak, Dubaul is selling and shipping up to two tons of flavored seafood per day.
