As veganism and lactose intolerance rise in the US, the push for dairy alternatives has become more and more streamlined. The options seem endless, and include soy, almond, hemp, cashew, rice, coconut, oat—and even more are predicted to sprout up in the near future.

While almond milk has easily been a fan favorite for years, oat milk is quickly becoming the star of trendy coffee shops and health food grocery stores alike. Oat milk is produced by soaking the grains to create a milk-like liquid. Equal parts creamy and easy to make, oat milk is popular for being both tasty and accessible.

“It’s the closest to whole milk for me, because of the consistency,” Juanise Allen, a barista at One World Commons café in Manhattan’s World Trade Center, told Mic.com. “It’s so popular here; it’s our number one non-dairy here,” she said.

As cows continue to lose their firm hold on the dairy industry, oat milk may just be your new morning drink of choice.
