Forget everything you once thought about Indian food, because NYC-based Indian-American chef, Floyd Cardoz, is changing your mind. His restaurant, The Bombay Bread Bar, has a mix of traditional and modern flavors that come together to make a standout menu in the saturated market of international eateries.

“I wanted to make [Indian breads] less intimidating,” Cardoz told Mic.com. “I’ve lived in the U.S. now longer than I’ve lived in India,” he said. “Immigrant cuisines change as our tastes and environment change. So I’m playing with my cuisine to see what works.”

The Bombay Bread Bar's menu is full of delights such as bacon-cheddar naan, a saag paneer pizza with spinach-mustard greens and goat cheese on a corn roti, and an array of chutneys that are sure to make you drool.

The inspiration for Cardoz's bread bar may have come from a 2016 food review from NY Eater columnist, Ryan Sutton, who at the end of a rave review of the chef's other, more formal locations, went as far as to say, “If Cardoz opened up a bakery, it’d be packed from morning to night.” Well, he wasn't wrong, as The Bombay Bread Bar is becoming one of the top destinations in SoHo.
